Boston Cookies

Comments: My husband wanted cookies and I didn't. I wanted to make these but I knew they made a lot so I did a 1/4 recipe. Thank goodness for vegan replacements where you can do that. I don't know why they are called Boston cookies, but they were one that my grandmother ALWAYS made. Always. I might have forgotten the cinnamon (my bad) but they were still inhaled. I really suggest the cinnamon personally ;)
Boston Cookies
Grandma Doyle
1 Cup Shortening
1 1/2 Cups Brown Sugar
3 Eggs (I use egg replacer)
3 1/4 Cups Flour
1 tsp Cinnamon
1/4 tsp Salt
1 Cup Raisins
1 tsp Baking Soda
Nuts & Flavouring (I add 1 Cup Walnuts and Vanilla Extract)
Method:
Cream shortening, sugar and eggs. Add 3 cups flour with baking soda, salt and cinnamon. Put a little flour over nuts and add flavouring. Dop on cookie sheet, bake at 350 degrees for 12-15 minutes. Makes 4 dozen. (ps, you might need more flour, I did. Just add it until it forms a nice dough, similar to chocolate chip cookie dough)
